OUR STORY

The main value of the "39 Qvevri" cellar is traditional Georgian wine, created from local grape varieties and aged in an old traditional way - in qvevri.

Our goal was to produce traditional wine, so we decided to build a winery in the village of Bitsmendi, one of the most significant historical places in Kartli, the center of viticulture and winemaking. We also set up our vineyard here, where we grow four Georgian

grape varieties (Shavkapito, Goruli Mtsvane, Kisi, and Khikhvi).

Bitsmendi has a special historical significance and is associated with famous traditional Georgian winemakers such as Guramishvili, with his famous vineyards and cellars, or Ilya Tsinamdzgvrishvili, one of the most prominent figures of the 19th century, founder and teacher of the Tsinamdzgvriantkari Agricultural School.

Our values and visions are based on this tradition.

OUR VITICULTURIST AND WINEMAKER

David Chichua is a biochemistry graduate and has been engaged in winemaking for more than 20 years. After graduating from university and whilst studying in graduate school, David worked in the laboratory of Tiflis Wine Cellar. After an internship within the program of the Geisenheim University, he headed and organized work in the laboratories of Vasi +, Vaziani and was also the chief winemaker in Khareba, Kindzmarauli Corporation, Vasi +.

Possessing extensive practical experience, he also teaches "Technology and Chemistry of Winemaking" at the Telavi and Georgian Agricultural Universities. His passion for search of an ancient, indigenous grape varieties led him to the Agricultural Research Center in Jigaura, where he could work without abandoning the teaching profession.

Experiments with nearly extinct grape varieties and the search for the best winemaking technologies made it possible to create the wine "39 Qvevri".

Viticulturist and winemaker – few people combine these two professions, but David Chichua knows how to do it and the best wines are yet to come.

OUR METHOD

The main value underpinning "39 Qvevri" cellar is traditional Georgian wine, created from local grape varieties and aged in an old traditional way - in qvevri.

The tradition of making wine in qvevri is the oldest cultural phenomenon for Georgia. In fact, it is the oldest tradition observed and cherished throughout centuries, developed over 8,000 years ago in Georgia, and still managing to stay true to its original nature. Since Neolithic time until now, making wine in qvevri has become a part of everyday life in the regions of Georgia. Over time, each region has developed its own, particular methods of winemaking in qvevri, based on different climate conditions, grape varieties and other local peculiarities. A very important step was taken in 2013 when UNESCO included the traditional method of making wine in qvevri in its list of the intangible cultural heritage of humanity.
